On Sunday there are sailboat races (sailboat racing is the national sport) from one end of the Island to the other.

We had the pleasure of spending the day at East Shoal Bay where the sand is so soft we did not even realize that our feet had left the sidewalk. Then, we saw the water! The beautiful shades of aquamarine just took our breath away.

We spent the day frolicking in the warm water and walking the beach...





Cooking in Anguilla


We are on day 6 of our Anguilla holiday. On day 3 I found Rainbow Farm in Anguilla. Their fresh vegetables are just delicious.

They grow several different kinds of lettuce including red, romaine, green leaf and red leaf. Just the taste of fresh produce is enough to make me feel a little 'taste of heaven'.

They also grow scrumptious tomatoes and peppers. The food was so beautiful, I decided to post them on my blog! What a treat eating a salad of fresh greens, tomatoes, green peppers, and scallions.

Notice the mountains in the background. Every morning this wonderful view of St. Maartin greets us with a cheery 'hello'. In the evening, we say goodnight to the ocean and the lights of St. Maartin. How beautiful and relaxing can you get!

Anguilla is a very beautiful island. We have spent our time lazily adjusting to island life where 'eryting irit' all the time!
